Seems it came down to a badly loaded Aircraft.
        Fuel imbalance etc.

Yes for me also, no problem with the rudder.

              The water rudder does nothing.
Gear down on (deep) water and it'll lift the rudders out of the water somehow.

I confess I've not ever flown an amphib or float IRL so buggered if I know.

The water rudders dont do anything. The actual aircraft rudder has more authority. In all weight regimes.
Ive flown Caravans for 20+ years but admit I only right seated the Canoed birds in FL. But this isnt modeled well.

Also, Nose gear tiller binding operates even with the rudder ruds up. So it just doesn't appear to have ANY simulation here.

@JakeBunny The water rudders have a huge and noticeable effect for me, as others have stated elsewhere, probably too much, actually. What is the steering tiller? Is this any different from the rudder input on the variants with conventional gear? How is the steering "operating" when the aircraft is in the water? Just looking for clarifications.
