I leave some time between flipping the integrated avionics to let their displays start. I turn on the EICAS, then the PILOT avionics and not the COPILOT avionics. But the DME at the copilot side turns on, not the one at the pilot side.

This is the correct behavior. You will find on the tablet's live electrical schematic that the left and right SDU's are wired to the cross-side generator buses for redundancy.
