This is my single greatest pain point with MSFS 2024. For the Baron and Bonanza, I went from having to create, maintain, and export 10 models for the user aircraft in MSFS 2020 to 90 models for MSFS 2024. Unfortunately, from a user perspective, even individual parts of the aircraft (like the landing gear, as you note) are automatically culled, regardless of the LOD model. Even objects in the cockpit will be removed if you zoom out too far, like while using a VR headset. I imagine these changes were designed to promote better performance on console. I'm very sorry that your ability to create videos with my aircraft has been diminished. I think that it's a major regression myself too.
Now, I haven't tried this... and I suspect it will still cull the small objects... but it's worth a shot. If you enable developer mode and navigate to the Options -> Debug Model LOD menu, you will find options like, "freeze LOD selection" that could give you more crisp models for your videos. Let me know how that works for you.
