I've noticed whenever I access the settings menu (via ESC key) when I switch back to the Grand Duke aircraft both engines are off.

Obviously, this isn't much for me to go on, but I would suspect a hardware problem. I've seen where if my hardware mixture or throttle are at cutoff, but I manipulate them in the simulator, a pause can cause them to return to the cutoff position.

I’ve identified the issue — it turned out to be a simple misconfiguration in SPAD.neXt.
