PA-28 behaviour

The Pa-28 was once my prized plane, The One Good Plane, but I must admit I don’t enjoy flying it at the moment. It’s behaviour is just odd, it feels “off” somehow.
I can’t seem to keep it trimmed anymore, it’s hard to keep altitude, it bounces around like a kite in the wind at all stages of flight, even at low winds… I don’t know. I think the word I’m looking for is “unstable”.
Is it me? Is this actually ‘normal’?
